A thick, juicy 8-ounce burger off the grill — the way a burger is supposed to taste.

No secret sauce. No twelve-step method. Just all-natural Brasstown Beef 80/20 ground beef patties, a good coat of salt and pepper, a hot grill, and buttered buns. The cheese goes on at the end, the fixings go on cold and crisp, and everybody builds their own.

The reason this works is the beef. Our ground beef comes from Angus cattle raised on open pasture in the Blue Ridge Mountains — a farm we can name, no antibiotics, no anonymous blend. At 80/20 you get enough fat to stay juicy on the grill without a puddle of grease in the bottom of the bun.

Why We Love These Burgers

A burger is the most honest thing you can cook. There’s nowhere for bad beef to hide.

Our ground beef comes from all-natural Angus cattle raised on a farm we can name — Ridgefield Farm at 1960 Brasstown Road, Brasstown, North Carolina — plus a small group of family farms held to the same standard. Open pasture in the Blue Ridge Mountains, grass and hay, growing at their own pace, no antibiotics. We’re not a boxed beef company buying from a thousand-head blend that tastes different every time you open a package.

You notice it on burger night. The flavor is clean and beefy instead of flat, the patties hold together on the grill, and there’s a lot less fat left in the pan — something our local customers bring up constantly. That’s why the recipe stays simple: good beef, good seasoning, good buns.

And it’s the easiest crowd food there is. Eight burgers, 25 minutes, everybody builds their own.
