Better Beef Starts on the Farm.

How Brasstown Beef Is Raised

The quality you taste in a Brasstown Beef cut did not start in the kitchen. It started years earlier on Ridgefield Farm, with decisions about which animals to breed, how to raise them, and what standard to hold to every step of the way.

That is where Brasstown Beef begins.

Genetics First

Built on Standards

Quality from pasture to plate

Naturally Better Beef.

Pasture-Centered from the Start

The cattle at Ridgefield Farm are raised on open pasture in the Blue Ridge Mountains of Western North Carolina, eating grass and hay as they grow. The animals move, graze, and develop at their natural pace.

No added growth-promoting hormones. No antibiotics.

Brasstown Beef animals grow at their natural rate — and that is precisely what creates depth of flavor and tenderness that mass-produced beef can’t match.

Built for quality, not volume.

The Ridgefield Farm Bull Deal

Steve did not just raise cattle. He built a genetics program around them.

The Ridgefield Farm Bull Deal is the system at the center of that program. Ridgefield bulls are bred to excellent herds owned by bull buyers. Only the best animals — those that meet Ridgefield Farm’s strict standards for genetics, disposition, and quality — enter the breeding herd.

This program was never designed around volume. It was designed around consistency. And that consistency shows up in every order.

No Hormones. No Antibiotics. No Shortcuts.

These are not marketing claims. They are operational commitments that have been in place since 1998.

No growth-promoting hormones means the cattle develop at their natural rate. No antibiotics means every animal in the program was healthy enough to make it through without intervention, or was removed from the program if they needed treatment.

No shortcuts means the standard applies to every animal, not just the ones someone is watching.

The result is beef that is all-natural in the truest sense of the word — not as a regulatory checkbox, but as a reflection of how Ridgefield Farm operates.

Harvested and Processed with Care

Cattle for Brasstown Beef are harvested at a USDA-Inspected facility in Missouri, with the beef brought to the company’s location in Greensboro for further processing into steaks and ground beef, and distribution.

This is a farm-to-table operation — and that farm is Ridgefield, North Carolina.

Originally, all Brasstown Beef cattle were raised on Ridgefield Farm in the Blue Ridge Mountains of Western North Carolina. However, as the program has grown, the company has developed a number of relationships with other family farms in several states that utilize the genetics required by Brasstown and raise the cattle in compliance with Brasstown’s strict standards.

Allowing cattle to grow at their natural rate supports better marbling, tenderness, and depth of flavor — qualities often lost in faster, industrial production systems.

Cattle are harvested at a trusted abattoir in Missouri, with the beef brought to the Greensboro, North Carolina, area for cutting into steaks and processing into ground beef, then distributed throughout the Southeast.
